Another Great Meatball And Pasta Recipe

This recipe uses sausages for meatballs (got the idea from Jamie Oliver). Make sure they are good quality ones; there is no point otherwise. Mine were from Cannings Free Range Butchers. This dish is even tastier as left-overs. Apart from the cheese, all my ingredients are organic.

Pasta for 4 people (spaghetti or penne is best in this dish I think)

5 medium sausages (I used Cannings Free Range Pork and Fennel sausages)

2 cans diced tomatoes

1 large grated zucchini

Dried oregano

1 large clove of garlic

Parmesan cheese

Cook pasta till ALMOST al dente.

Drain and leave in colander

For sauce

Heat oil in heavy duty pan

Squeeze the sausage meat out in golf ball sizes into the pan (I like to do things on the fly but if this is the first time you have done it or like to be more organised, do this on a plate before heating up the oil. Something fun to do with the kids maybe…)

Saute until browned all sides

Add crushed garlic, salt and pepper

Saute for another few minutes

Mix in tomatoes and zucchini

Stir till hot and bubbly

Cover with lid

Lower temperature and simmer for 10 minutes (more if there is time)

Add the pasta to the sauce

Turn the heat up and stir for around 5-10 minutes till hot (pasta should be al dente when done)

Serve topped with freshly grated parmesan cheese
