- Half a medium fennel thinly shaved/sliced
- Half a medium red onion thinly sliced
- Half a peeled apple thinly sliced (can also use pear)
- Handful of walnuts
Place fennel, onion and apple in a bowl
(If you want to prepare salad beforehand, slice apple just before you are about to dress the salad to avoid it going brown)
- Large handful of basil
- One egg
- Three anchovies
- 1/3 cup vegetable oil
- 1 tablespoon white wine vinegar
Process egg, vinegar, basil and anchovies in food processor or blender until combined. With motor still running, slowly pour in oil until smooth and combined.
Pour over salad ingredients and combine well with hands. Plate, sprinkle with walnuts and freshly ground black pepper.
We only used half the mayonnaise so used the rest of it the next night, adding the prosciutto.
